Morag MacLeod's maize scones

[Mairi] Morag, now this is a very unusual thing, something that we don’t see very often today.

[Morag] There aren’t many at all making these today. It’s something that they used to do in the old days but I don’t know why really.

[Mairi] What’s so special about them. What is different from any other scone?

[Morag] I use this meal, I call it Indian meal, Maize meal, it is also called that.

[Mairi] And how much flour do you have here?

[Morag] There are 12 ounces of flour there and flour and four ounces of maize meal there. And you put it together like that and I use baking powder but in the old days it was bicarbonate of soda and cream of tartar that.

[Mairi] Two spoons of that.

[Morag] Two spoons of that and we now put two ounces of oil and it is oil that I use for a scone and I don’t use margarine at all now and milk to mix it.

[Mairi] There is maybe a few ounces of milk there.

[Morag] Well I only put in a splash so that I can see that it’s just

[Mairi] And is it easy enough to get this meal on the island, do you get it here or?

[Morag] No, apparently you can get it on the island but when I go away to the mainland I get it in the health food shops, that’s where I get it.

[Mairi] And it’s not a recipe, well you don’t have any recipe but you make this just as you saw your mother do it.

[Morag] Yes, like I saw my own mother do it and I don’t have a recipe for it at all.

[Mairi] And you do a lot of baking, your work every day nearly, isn’t it?

[Morag] Yes I do a good amount here, yes

[Mairi] Do you make these scones?

[Morag] I do.

[Mairi] Tourists always enjoy scones don’t they?

[Morag] Yes they do, they have these ones, it’s surprising. Do you make scones yourself?

[Mairi] I make plain ones and ones with fruit in them.

[Morag] Oh I make some of those too. I make ones with strawberries in them too. This is quite hard, harder than rolling out the plain ones. A bit, it’s a bit sticky.

Now long ago that’s how they used to cut them.

[Mairi] I remember my grandmother that’s how my grandmother used to cut them too.

[Morag] But I cut them like this, here.

[Mairi] You’ll get more out of it.

The hotter the oven is the better the scones will be you said.

[Morag] Yes. This is quite thick isn’t it?

[Mairi] That didn’t take long.

[Morag] It doesn’t take a minute.

[Mairi] That’s what’s good about scones, they won’t take a minute but they’ll last in the freezer for.

[Morag] They will.

[Mairi] And everyone enjoys them.

[Morag] Will we manage to put this here without dirtying another dish? There we go, that’s it.

[Mairi] Now how long in the oven?

[Morag] A quarter of an hour

[Mairi] At what kind of heat?

[Morag] Between 200-250. Well that is a fan oven so it’s different for other ones.

[Mairi] This is how a scone should look.

[Morag] It is.

[Mairi] I like these cut instead of being round.

[Morag] Instead of being small and round.

[Mairi] Cut using cutters.

[Mairi] What’s your opinion then, are you happy with them? They look amazing.

[Morag] They look a bit small and thick but anyway, we will see what they are like. We’ll cut it. That’s it.

[Mairi] Nice yellow colour on them isn’t there?

[Morag] Yes

[Mairi] We’ll take a wee bite off them, will we?

[Morag] Don’t you want butter on it?

[Mairi] No I don’t. Mm good while they’re still warm.
