Make Norma Ferguson’s cupcakes

[Mairi] I’ve come to Barra where Norma Ferguson is going to show me the first kind of cake she ever made.

[Mairi] You need sugar first.

[Norma] Yes

[Mairi] How much butter do you have there?

[Norma] Umm six.

[Mairi] Ounces.

[Norma] And six of sugar too.

[Mairi] And this is mixed together first.

[Mairi] What now?

[Norma] Umm the eggs.

[Mairi] Three eggs?

[Norma] Three eggs, yes, and six of flour too.

[Mairi] Six ounces of self-raising flour.

[Norma] Yes.

[Mairi] It’s very simple, isn’t it?

[Norma] Yes.

[Mairi] And everyone enjoys these plain cupcakes?

[Norma] Yes, I think so, I hope so.

[Mairi] And small children too.

[Norma] Oh yes. I’m going to mix it again.

[Mairi] Everything is in the bowl and Norma is now mixing it just one last time.

[Mairi] When did you start baking initially Norma?

[Norma] Umm maybe three years ago.

[Mairi] You were pretty young then.

[Norma] I was.

[Mairi] Was it mum that got you started?

[Norma] Yes.

[Mairi] Is this ready now?

[Norma] Yes, to put into...

[Mairi] Everything has come together and is now being put into the tin.

[Norma] Yes.

[Mairi] And you’re filling each case until they are maybe half-full, then?

[Norma] Yes.

[Mairi] And they don’t need long in the oven, do they?

[Norma] No, maybe ten or fifteen (minutes).

[Mairi] And then what are you going to put on them afterwards?

[Norma] Maybe chocolate and hundreds and millions. I’m just going to put them into the oven.

[Mairi] Very good then.

[Mairi] The cupcakes will only be ten minutes or quarter of an hour at a temperature of a hundred and eighty in a normal oven.

[Mairi] It’s once they are ready that the fun begins.

[Mairi] They’re certainly looking sweet now.

[Norma] Yes.

[Mairi] Norma puts a good layer of chocolate and butter on them and a shake of sugar strands.

[Norma] They are very good.

[Mairi] They are sweet.

[Norma] Yes.
