Mary Ann MacKenzie’s scones with duck

English Beurla

[Mary Ann] There is eight ounces of plain flour.

[Mairi] Now these are just plain scones...

[Mary Ann] Plain scones.

[Mairi]... that you could use as a scone or perhaps as...

[Mary Ann] Or you could add cheese or you could also add cayenne pepper or salt or pepper or something like that, and you could make it sweet. You could add herbs too if you wanted but this is just a plain scone. Just for the base, that it is plain.

[Mary Ann] I am adding just now a wee bit of soda and two spoons of cream of tartar. And a tiny bit of sugar, although they are plain. And... mixing that together and then putting a wee bit of butter, just about two ounces of butter, and for it to be quite soft because it is easier to mix up. Also an egg and a wee drop of milk are added.

[Mary Ann] Quite similar to how you make pastry but it is not quite so... It is very... Many add an egg to a scone but you don’t need to add the egg unless you wish but I think that an egg gives it... it makes it lighter, I think.

[Mary Ann] Until it comes, your bowl is nearly clean and you barely need to clean it.

[Mairi] And as little handling as possible is best.

[Mary Ann] It is, it is best. Just do as little handling of them as you can.

[Mary Ann] And just pull it together like that. The scone is, it is easy to make and it is... Everyone likes a scone. Well I think that everyone likes a scone anyway. And you can, you could add a different flour. You could [add] brown flour or granary flour and there are wee pieces of, you know, of seeds in it and you could use that too and that is good. Now, I do not use a rolling pin for scones at all. I just spread it out with my hands like that, even when I have lots. Just make sure just, that, as the old women did it long before they had a rolling pin. Just spread it out like that and then. Now, if you could get a smaller one than that maybe that would be just as good too. Just cutting them in small pieces like that and you only need to use half a scone for a canape.

[Mairi] They look nice, just a good size.

[Mary Ann] I think that they...

[Mairi] A wee mouthful instead of...

[Mary Ann] It is, a wee mouthful but as the men would say it is better than some of the tiny wee canapes, you know the tiny little ones. There is not even a bite in them.

[Mairi] Now Mary Ann, these scones have cooled and they look excellent. Are you happy with them?

[Mary Ann] Yes, I am happy with them. I am happy that they turned out so well as I was afraid, you know, that they would not look nice enough for something like this.

[Mairi] Mary Ann slices duck meat that she herself smoked. She puts a good spread of cream cheese and chutney on the scones and covers them with slices of meat.

[Mairi] I like the flavours.
